Ingredients
For the Cupcakes
• 2 scoops Kinali® Whey Protein Isolate — Vanilla flavor
• 1 ½ cups all-purpose flour (or oat flour for a gluten-free version)
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp ground cinnamon
• ¼ tsp ground nutmeg
• ¼ tsp salt
• 2 large eggs
• ½ cup unsweetened applesauce
• ¼ cup Greek yogurt (plain, full fat)
• 2 tbsp honey or maple syrup
• 1 tsp pure vanilla extract
• 1 medium apple, peeled and finely diced (about 1 cup)
• 2 tbsp coconut oil, melted
For the Protein Frosting (Optional)
• 1 scoop Kinali® Whey Protein Isolate — Vanilla
• ¼ cup cream cheese, softened
• 2 tbsp Greek yogurt
• 1 tbsp honey
• 1 tsp vanilla extract
• Pinch of cinnamon
Instructions
Step 1 — Prep
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners. Set aside.
Step 2 — Mix the dry ingredients
In a large bowl, whisk together the flour, Kinali® Protein Isolate, baking powder, baking soda, cinnamon, nutmeg, and salt until fully combined.
Step 3 — Mix the wet ingredients
In a separate bowl, whisk the eggs, applesauce, Greek yogurt, honey, vanilla extract, and melted coconut oil until smooth and well incorporated.
Step 4 — Combine
Pour the wet ingredients into the dry bowl and stir gently until just combined — do not overmix. Fold in the diced apple pieces.
Step 5 — Fill and bake
Divide the batter evenly among the 12 cupcake liners, filling each about ¾ full. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. Let cool on a wire rack for at least 15 minutes before frosting.
Step 6 — Make the frosting (optional)
Beat the cream cheese until fluffy. Add the Kinali® Protein Isolate, Greek yogurt, honey, vanilla, and cinnamon. Mix until smooth and creamy. Pipe or spread onto cooled cupcakes.
